With Spicy Pulled Mushroom, you get that same sticky, deep warmth you’d normally expect from pulled beef or chicken-but made entirely from Fable’s shiitake. Combined with hot fries, creamy cheddar cheese sauce, frijoles, jalapeños, red onion, a dollop of guacamole and crushed nacho chips, this becomes a warm dish that perfectly balances comfort and modern vegetarian appeal.
Almost everything can be prepared in mise en place, so at service you’re simply assembling.

Prepare the pulled mushroom: Pull the shiitake fully apart into a coarse pulled texture.

Cook: Cook the pulled mushroom on a hot griddle or in a pan until the moisture has evaporated.

Season: Add Fajita seasoning and briefly cook through.

Make it sticky: Add Spicy Chipotle and let it caramelise and turn sticky on the griddle.

Hold warm: Keep the Cajun Pulled Mushroom warm in the bain-marie.

Prepare the fries: Fry the fries until golden brown and crispy.

Build the base: Cover the hot fries with warm cheddar cheese sauce.

Add the filling: Spread the frijoles over the fries and top with the warm Cajun Pulled Mushroom.

We season the Fable Pulled Mushroom with Mexican flavours-and that perfectly shows how versatile Fable’s mushrooms are. Once you’ve seasoned the pulled mushroom in mise en place, you can use it for a Queso Taco as well as a delicious Mexican Rice Bowl. But here, we’re focusing on veggie loaded fries.
The Fable is first fully pulled, then cooked on a griddle or in a pan. As the steam releases, the shiitake’s natural deep umami is brought to the surface. Even at this stage, the mushrooms are already full of flavour-but we take it a step further. Add a bit of Fajita seasoning, followed by Spicy Chipotle. Let it lightly caramelise, then hold the pulled mushroom in the bain-marie. This keeps it warm without drying out.
