How to build the veggie Queso Taco

Follow the step-by-step preparation below:

  1. Prepare the pulled mushroom: Pull the shiitake completely apart into a fine pulled texture.

  2. Cook: Cook the pulled mushroom on a hot griddle until the moisture has evaporated.

  3. Season: Add Fajita seasoning and briefly cook through.

  4. Make it sticky: Add Spicy Chipotle and let it become sticky on the griddle.

  5. Prepare the tortilla: Generously spread cheese sauce over the tortilla.

  6. Fill: Add beans, corn and the pulled mushroom.

  7. Fold: Fold the tortilla closed and set aside.

  8. Finish to order: Place the taco in a contact grill until warm, cheesy and crispy.
