The Cajun Pulled Mushroom Rice Bowl is exactly that. Fable’s pulled shiitake brings deep umami and warmth, while rice, beans and avocado create a modern bowl that’s both healthy and comforting. Cajun Pulled Mushroom Rice Bowl

  1. Prepare the pulled mushrooms: Pull the Fable shiitake apart into coarse chunks.

  2. Cook: Cook the shiitake on the griddle until the moisture has evaporated and they become firm.

  3. Season: Add Fajita seasoning and briefly cook through.

  4. Make it sticky: Add Spicy Chipotle and allow it to become sticky on the griddle.

  5. Hold warm: Keep the Cajun pulled mushroom warm in the bain-marie.

To order:

  1. Build the base: Use rice as the base of the bowl.

  2. Add avocado: Pipe the guacamole along one side of the bowl.

  3. Add beans: Place the black beans on the other side.

  4. Add the filling: Spoon the Cajun pulled mushroom into the centre.

  5. Add topping: Add a generous spoon of Tropical Relish.

  6. Add crunch: Sprinkle with crushed nacho chips.

  7. Finish: Garnish with spring onion and coriander.

  8. Serve: Serve with a lime wedge on the side.

How do you prepare Fable pulled mushroom for foodservice dishes?

Fable consists of compressed pieces of pulled shiitake that are already lightly seasoned, yet intentionally neutral enough to be further flavoured in the kitchen. For this recipe, we first “pull” the product-basically tearing it apart.

You always cook mushrooms without oil, on a griddle or in a pan. You’ll see the steam release as this happens, and that’s when the mushroom’s natural umami really comes out. Don’t worry about burning them-it won’t happen easily.

After that, you can season the Fable pulled mushroom any way you like. In this recipe, we use Fajita seasoning, which works incredibly well. And if you really want to add deep flavour, adding some Spicy Chipotle from Smoky Mountains on the griddle is a great move. The heat caramelises it, giving you that pulled BBQ feel-completely veggie.

And good to know: you can simply hold the Fable warm in the bain-marie, ready to go for service.
