Vegan burgers with a flavour of their own

A plant-based burger has to win on flavour and presence, not on the label. The Beetroot Butcher Burger is made from beetroot and soy and stands out for its colour and firm bite; we think it is the best vegan burger we have ever tasted, and committed meat eaters order it too. The NY Fusion Burger is inspired by the neighbourhoods of New York, from Spanish Harlem to Chinatown, which puts something on your menu that guests will not see anywhere else. Both go straight from the freezer into the pan or the fryer, so anyone in your kitchen can cook them. The right bun is under burgers, hot dogs and buns.

Pulled Shiitake: not imitation meat, but mushroom

Pulled Shiitake comes from Australia, where chef and mushroom expert Jim Fuller discovered that the stems of the shiitake have the best structure of all. Slow-cooking and pressing them creates a product with the fibres and the bite of pulled pork, but 100% vegetable. Use the pieces whole for a firm bite, pressed flat for a pulled effect, or sliced for a wok dish or a wrap.

Restaurant El Popo in Deventer runs it in their tacos al pastor, even on a Saturday night with 250 covers: consistent in quality and easy to work with. On your Mexican menu it works just as well as in a bowl.

Fried pickles and hemp: the two that finish your menu

The Original Fried Pickles are the trend straight out of American sports bars: thin slices of pickle in a crispy coating, fresh, sour and hot. They work as a bar bite with a dip, as a topping on a burger or over a salad, and sit neatly alongside your other snacks & sides. And the Hemp Sauce is 100% vegan, with a nutty flavour and a subtle smoky touch from the hemp oil, ideal with fries, burgers, hot dogs and tacos.

Frequently asked questions about plant-based products

Is Pulled Shiitake a meat substitute?

No, it is 100% shiitake. The fibre structure does give you the same pulled bite as pulled pork, and the umami means nobody feels they are missing out. That is exactly why it also works for guests who normally eat meat.

How many plant-based dishes should I put on the menu?

One good dish is enough, as long as it sells on its own merits. Choose a burger or a filling you can use in several dishes and you keep your stock small.

Are these products suitable for vegan guests?

The Beetroot Butcher Burger, the NY Fusion Burger, Pulled Shiitake and the Hemp Sauce are vegan. For the Fried Pickles it depends on the coating; check the product page for the current specification. There are plant-based options outside this category too: the sauces, relishes and toppings page shows a vegan sticker on each product, and all our seasoning blends are vegan.

What is the best way to cook Pulled Shiitake?

Thaw it first, then cook it over high heat, the way you would cook a mushroom. Let it sit without stirring at first so the moisture evaporates and the umami develops. Add seasoning or sauce only at the end.
