A recognisable taste, every time

To truly make a difference with seasonings, the flavour needs to be consistent every single time. It’s that recognisable taste that keeps guests coming back.

That’s why I prefer working with a fixed seasoning blend. Everyone uses the same base, the same ratios. No differences between chefs. No doubt about how much to add this time.

With individual spices, I often see things go wrong. One person adds a little more than the other. And before you know it, your dish tastes different today than it did yesterday. That’s simply not what you want.

I’ve always been a big fan of quality seasonings. That’s why we sold Paul Prudhomme seasonings for many years. They were truly excellent.

But unfortunately, Paul Prudhomme seasonings no longer comply with strict European regulations, which forced us to stop offering them.

Magic Seasonings is currently working on developing a European seasoning line. A lot of effort is going into meeting all regulations and returning in the future. But as a foodservice business, you can’t wait for that. The kitchen keeps running.

And that’s exactly why we are introducing the new Smoky Mountains seasoning range. A fully-fledged and distinctive alternative that allows you to keep moving forward right away.

From Louisiana to your kitchen

The inspiration for these blends comes from Louisiana, on the Gulf of Mexico. And believe me, they know what flavour is there. I’ve been there myself, and what you taste there… it’s truly different from what you’re used to here.

French, Spanish, African and Caribbean influences come together there. You can taste that in everything. A French base, but with a lot more seasoning.

Two styles emerged from that cuisine: Cajun and Creole. Cajun comes from the countryside and is known for simple dishes with bold seasoning. Creole originates more from New Orleans and mixes French influences with spices from Africa and the Caribbean.

What do they have in common? Seasonings are the foundation there. And you can taste that in the Smoky Mountains seasoning range.
