Burnt Ends originated in the barbecue culture of Kansas City. They were the dark, caramelised pieces of brisket that pitmasters trimmed off and handed out for free to people waiting in line. It quickly became clear that these pieces were actually the most flavourful. Guests started coming back specifically for those bites, and Burnt Ends evolved into a dish in their own right.

At barbecue events and competitions, pitmasters continued to experiment. They discovered that pork belly was even better suited for this style of preparation. Pork belly turned out to be more tender, juicier and easier to caramelise.
