This burger combines the best of two worlds: the juiciness of a premium beef patty with the bold, spicy and umami-rich flavors of Korean cuisine. See below the step-by-step preparation:

  1. Cooking the Fresh Burger: Cook the Fresh Burger (150g) in a pan or on the grill until it is golden brown and done, and make sure it stays juicy.

  2. Toast the Brioche Bun: Toast both halves of the Brioche Bun in a pan with garlic butter until they are lightly golden brown and crispy.

  3. Make the Spicy Gochujang Mayo: Mix mayonnaise, gochujang, honey, rice vinegar and sesame oil well together into a smooth, spicy sauce.

  4. Build the burger:

    • Start with the bottom half of the toasted brioche bun.
    • Place a handful of fresh lettuce on the bun.
    • Add the cooked Fresh Burger.
    • Place a slice of Real Irish Cheddar on top of the burger so that it melts from the heat of the burger.
    • Add a spoon of kimchi for a spicy and sour layer.
    • Cover the kimchi with the spicy gochujang mayo for extra heat and creaminess.
    • Sprinkle toasted sesame seeds over the mayo for a nutty flavor and texture.
    • Finish with crispy spring onions for a fresh and spicy crunch.
  5. Finishing: Place the top half of the toasted brioche bun on the burger and serve immediately.
