09 January 2026Open melts are the trend right now-you see them everywhere. And for good reason: they’re like hip, upgraded grilled cheeses, and everyone loves melted cheese. Warm, cheesy, bold and incredibly satisfying. This melt on rustic baguette combines melted cheddar with Smoky Caramelized Fable mushroom chunks: shiitake coated in a deep BBQ caramel with rich umami. Thin slices of dill pickle and the original Ballymaloe tomato relish complete the dish. This is the kind of plate guests take photos of. And because it’s vegetarian, it’s a true crowd-pleaser on any menu.

Open Melt Sandwich with BBQ Fable Mushroom

Cook the shiitake: Cook the shiitake without oil on a hot griddle until firm and all moisture has evaporated.

Season: Season to taste with spices.

Caramelise: Add Tomato Relish and Hickory BBQ Sauce and allow to lightly caramelise until a sticky BBQ glaze forms.

Hold warm: Keep the Fable mushroom chunks warm in the bain-marie.

Toast the baguette: Toast one side of the baguette on the griddle for an open melt.

Melt the cheddar: Top with Cheddar and allow it to fully melt.

Add the filling: Spoon a generous portion of Fable mushroom chunks on top.

Finish: Add thin slices of dill pickles or serve them on the side.
