What are birria tacos?

They originate from Tijuana, Mexico, right on the US border, and were created by Don Guadalupe Zárate. He put a twist on the traditional dish Birria-a goat stew-by switching to slow-cooked beef. And that turned out to be a game-changer.

The secret? Juicy, spiced beef braised in a rich broth made from dried chillies, garlic and spices. The corn tortillas are dipped in the fat from the stew, then grilled with cheese, filled with the meat and folded into golden, crispy tacos.
