Current Mexican Streetfood trend no. 1: The Birria Taco, including an authentic recipe

Lately, we are seeing more and more of the Birria Taco on the international social media scene. Of course, we already knew this great street food dish from Mexico and the USA, but it is a fact that it's now becoming an international street food trend!
But what exactly is a Birria Taco? And why is it so great?
Birria Tacos come from Tiujana Mexico (on the border with America) and were invented by Don Guadalupe Zárate. The original dish, ''Birria'', is a goat stew but Zárate preferred using beef for the tacos.
Wait a second... We already know tacos made with beef stew from the Barbacoa-like dishes... So what makes this dish special? It is precisely the love and extra attention – and it's dripping with grease :)
In a nutshell:
- Make an epic Mexican Pulled Beef stew
- Dip the Tortillas in the juice and fat from the beef
- Bake the Tortillas in a baking tray with cheese
- Fill the tacos with the beef and fold them over
- Dip in the juice from the stew or guacamole or Mexican red sauce! Or all of them! Whatever you want!
