This bun is all about warmth, stickiness and depth. It’s loaded with vegetarian “brisket” made from Fable’s pulled shiitake, gently caramelised with onion and Hickory BBQ Sauce. Warm and sticky straight from the mise en place. The quick-pickled cucumber adds a freshness that makes the flavour incredibly rich. To finish it off, Big Easy sauce ties everything together. A small bun with a big streetfood bite — plant-forward, modern and perfect for foodservice.

Fable Brisket x La Streetfood Burger

Follow the step-by-step preparation below:

  1. Prepare the Fable: Pull the Fable pulled shiitake apart into a coarse pulled texture.

  2. Heat: Place the Fable in a hot pan or on the griddle and gently heat until the mushrooms are hot and steam is visible.

  3. Cook the onion: Briefly cook the Caramelized Onions alongside until warm and lightly caramelised.

  4. Season: Add BBQ seasoning to the Fable and mix well.

  5. Glaze: Add the BBQ Sauce and allow it to briefly caramelise until dark, glossy and sticky.

  6. Combine: Mix the onions and Fable together and keep warm in the bain-marie.

  7. Make quick-pickled cucumber: Mix the cucumber with white wine vinegar, American Mustard and a little sugar. Let it sit briefly until fresh and lightly acidic.

To order:

  1. Toast the bun: Lightly toast the pretzel bun until golden brown.

  2. Add the filling: Place a generous portion of warm Fable “Brisket” on the bun.

  3. Add freshness: Top with some quick-pickled cucumber.

  4. Sauces: Drizzle Big Easy Sauce over the bun and finish with a little American Mustard.

  5. Finish: Place the top bun on and serve immediately.

For this bun, we use Fable’s pulled shiitake as the base for a vegetarian brisket. It clearly shows how powerful and versatile Fable is in savoury streetfood dishes. By seasoning the pulled shiitake in mise en place, you can use it not only on a pretzel bun, but also translate it easily to loaded fries or other warm sandwiches.

The Fable is first fully pulled and then cooked without oil in a pan or on the griddle. As it cooks, steam is released and the natural umami of the shiitake is intensified. Next, the mushrooms are further flavoured with onion, BBQ seasoning and BBQ Sauce. Letting this briefly caramelise creates a warm, sticky brisket-like texture that works perfectly on bread. The pulled mushroom can then be held warm in the bain-marie without drying out or losing its structure.
