Recipe: California Sunshine

Avocado, bacon, sweet onions and roasted peppers. Sunny, fresh and just a little smoky — that’s the California Sunshine. This hotdog is a flavour bomb that scores big on lunch menus, at festivals or as a signature snack. Bonus: you can build it lightning fast with ingredients you probably already have in your kitchen.

The ultimate summer hotdog for your foodservice business

Follow the step-by-step preparation below:

  1. Make the Big Paul Sauce:
    • Mix 80 g Hemp Sauce, 2 tablespoons of American Mustard, 60 g Sweet Pickle Relish, 2 tablespoons of Pepper Relish and 1 dessert spoon of Burger Magic
    • Stir well, cover and chill in the fridge

  2. Wrap and grill the hotdog:
    • Wrap the NYC Classic Hotdog in Bacon Sweet, Cured & Cooked
    • Grill on a flat top until the bacon is nice and crispy

  3. Grill the peppers and onions:
    • Slice the red pointed pepper into strips
    • Add together with the Caramelized Onions to the grill
    • Season lightly with Burger Magic

  4. Toast the bun: Slice the Haute Dog Roll de Luxe open at the top and toast both sides on the grill.

  5. Build it up:
    • Place the bacon-wrapped hotdog in the bun
    • Add the caramelized onion and roasted pepper
    • Top with fresh avocado slices
    • Finish with a generous swirl of Big Paul Sauce

  6. Serve immediately: Ready to go - fresh, creamy and bursting with summer flavour!
